This recipe is so easy to make, I really wanted to share it with you all.
Despite the cold weather in my city for the past few days, I wanted to make a tangerine cheesecake at all costs. We are not in tangerine season, which complicated things; however, I found a few at the supermarket; and even though they didn’t look very pretty, that wasn’t going to stop me.
IMPORTANT:
The key to get a delicious and not-sour taste, is to remove the skin and seeds from the tangerine segments. It takes a little while but it’s worth it. Peel as many as you need, until you reach 1 cup.
You need a springform pan to make this cheesecake, or you can use a pie pan if there is no need to unmold the cheesecake.
The unflavored gelatin I use is granulated, and I prepare it according to the box’s instructions.
Here goes the recipe:
INGREDIENTS:
175 gr graham cracker crumbs
½ cup salted butter, melted
450 gr cream cheese
1 can (397 gr) condensed milk
1 cup tangerine segments, peeled and seedless
7.5 gr unflavored gelatin
A couple of tangerines to decorate (optional)
INSTRUCTIONS:
Mix graham cracker crumbs and butter.
Transfer the cracker mix to a springform pan (or pie pan) and press on the bottom and sides of the pan. Place it in the fridge while you prepare the rest.
In a blender, mix cream cheese, condensed milk and tangerine.
Without turning off the blender, add the prepared unflavored gelatin.
*How to prepare unflavored gelatin: mix the granulated gelatin with 3 tablespoons of cold water, once the gelatin is all wet, let sit for 3 minutes. Add 4 tablespoons of hot water and mix until it’s melted.
Place the batter in the pan and refrigerate for minimum 6 hours, preferably overnight.
You can decorate it as you wish, or even not decorate it at all.
I decorated it with some tangerine segments creating a heart shape, sometimes I do corny stuff like that (only sometimes) haha
