My Christmas spirit has finally awakened. It will be different this year; zero family and friends’ gatherings, zero crowded places.
Most of all, saving money is priority since we don’t know for how long the pandemic will affect us.
Why not baking something delicious for your family? Bake with the kids or other loved ones, set the Christmas tree and decorate your home, even if you don’t feel like it at the moment.
Now, more than ever, we need to hold on to the true meaning of Christmas, which is not spending money like crazy, but love and hope.
I will post a few Christmas yummy recipes so you can try them at home and share them with your loved ones.
We’ll start with this recipe that I love because it tastes like Christmas. The chocolate and cherry flavor of the cookie reminds me of some German cookies I’ve tried before and loved; I forgot the brand, but never its flavor. They’re very easy to make, but if you have a question, post it on the comment section and I will gladly reply.
INGREDIENTS:
1 ½ cup all-purpose flour
2/3 cup unsweetened cocoa powder
¼ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon baking soda
½ cup unsalted butter, at room temperature
½ cup sugar
½ cup brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 teaspoons cherry juice (from the cherry jar)
1 jar of maraschino cherries
1/3 cup chocolate chips (to pour on top of cold cookies)
INSTRUCTIONS:
In a bowl, mix together flour, cocoa powder, salt, baking powder and baking soda.
In other bowl beat butter, sugar and brown sugar until creamy (3 minutes max).
Add eggs, one at a time, combining after each addition.
Add half the flour mixture and mix until combined, do the same with the other half of flour.
Add the vanilla extract and cherry juice, mix until combined.
Cover the dough with plastic film and refrigerate for 30 minutes.
Preheat oven to 350°F (180°C).
Line 1 or 2 baking sheets with parchment paper.
Place balls of dough on baking sheets, about 2 inches apart from each other. The measurement I use for these cookies is 1 ½ tablespoons.
Using your thumb, press in the middle of the ball and then place a cherry there.
Bake for 10 to 12 minutes (it took 12 minutes in my oven). Remember, each oven is different, make sure to write down how long it took in yours, for next time.
Let cool completely.
Melt the chocolate chips and let cool a bit. Pour the melted chocolate over the cooled cookies and let dry.
Makes about 24 cookies.
