I have tried many recipes for banana bread and yes, they are delicious, but this one gets the award.
The key ingredient here is Greek yogurt, which gives the bread a unique and delicious flavor. Also, it is very easy to make, so here it goes:
INGREDIENTS:
2 cups flour
½ cup sugar
¼ cup brown sugar
1 tsp baking soda
½ tsp salt
3 very ripe bananas, mashed
¼ cup Greek yogurt
2 large eggs
¼ cup vegetable oil
2 ½ tsp vanilla extract
1 cup chocolate chips, or chopped semisweet chocolate (or even pecans)
INSTRUCTIONS:
Butter a loaf pan, line with parchment paper; butter the parchment, dust with flour.
Preheat oven to 350°F (180°C).
In a bowl, whisk together flour, sugar, brown sugar, baking soda, and salt.
In other bowl, mix together bananas, eggs, Greek yogurt, vegetable oil, and vanilla extract. Add the flour mixture and mix until combined.
Add the chocolate chips (or pecans) and stir until combined.
Transfer the batter to prepared loaf pan, and spread some chocolate chips (or pecans) on top.
Bake until cake tester comes out clean, about 50 to 60 minutes (it took 50 minutes in my oven). Remember, each oven is different, so make sure to write down how long it took in yours, for next time.
After taking it out, wait for it to cool completely before removing it from the loaf pan.
