It’s been a while since I’ve wanted to share these hot cocoa cookies. It’s just that when you eat them, you feel the taste of hot cocoa with marshmallows. Obviously, the cookies are not hot, but the feeling is there; the consistency of the cookie is chewy and it melts in your mouth. It’s quite an experience!
The original recipe has icing on top, but I prefer to use melted semisweet chocolate in order to have de ideal level of sweetness.
Since Valentine’s Day is coming, you could decorate it with some hearts on top, they will look lovely!
*If you buy the big marshmallows you must cut them in half.
Here goes the recipe”
INGREDIENTS:
½ cup unsalted butter
340 gr semisweet chocolate, chopped
1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
¼ teaspoon salt
1 ¼ cups brown sugar
3 large eggs
1 ½ teaspoons vanilla extract
Marshmallows for aprox. 36 cookies
¾ cup semisweet chocolate (or the one you prefer), chopped (to cover the marshmallows)

INSTRUCTIONS:
Melt the chocolate and butter in the microwave on 30-second periods, stirring after each period, until melted. Set aside and let cool down a bit.
In other bowl, mix together flour, cocoa powder, baking powder and salt.
In other bowl, beat the eggs, sugar and vanilla extract, on low speed, until combined.
Add the melted chocolate and mix until just combined.
Add the flour mixture and mix just until everything is combined.
Cover the dough with plastic film and refrigerate for 1 hour.
Preheat oven to 350°F (180°C).
Line one, or up to three baking sheets with parchment paper.
Place balls of dough on baking sheets, about 2 inches apart from each other. The measurement I use for these cookies is 1 ½ tablespoons.
With the palm of your hand, flatten the balls slightly.
Bake for 12 minutes.
Remove the baking sheets from the oven and immediately place one marshmallow, or half a big one, on top of each cookie. Then put them back into the oven for 2 minutes.
Remove from the oven and let cool for 5 minutes before transferring them to a cooling rack.
Once the cookies are cold, melt the chocolate in the microwave, on 30-second periods (same technique as before). Wait for it to cool and thicken a little bit and then cover the marshmallows with it. Place sprinkles on top before the chocolate hardens.
Makes about 36 cookies.
